Paella is a funny one. It's risotto essentially, only of course it's not. For starters I always cook it in summer. A traditional paella pan heaving with prawns,chicken, capsicum, peas, onion and lots of chorizo sausage is the ultimate dish to serve with crisp cold beer. Alan made the most sumptuous strawberry swirl icecream which was really just heavenly. A lovely end to a steamy summer Sunday.
